Vacuum sealing is the answer to many questions. I know that sounds silly … but how to buy in bulk and keep food fresh was the reason I did buy one. And, it works! If you freeze in regular plastic zipper type bags, they get freezer burnt pretty quickly. FoodSaver bags keep my food fresh.
But, you can also use them to waterproof items for camping or for emergency storage. There are all kinds of things you can do with them. A few ideas, keep your matches dry, keep documents safe from water, keep dry food safe from bugs if you need to store in your basement or garage. Anyway, I don’t know what I would do without mine.
With that said, mine died in the middle of making wedge potato fries the other day. My new one came today … early Christmas present from my husband.
So here is what I have been doing lately: I bought (2) 10 lb bags of potatoes to cook and freeze for easy meals later. It was an awesome deal that I got at Giant Eagle – the potatoes were $6.97 a bag AND buy one get one free.
I boiled some and made mashed potatoes. I also made wedge fries, hash browns, and diced potatoes. I want to note here that if you do this, be sure to freeze your cut potatoes in a single layer or they will all clump together. Then, put them in the bag to freeze.
Also, I like to cool my potatoes quickly after baking. I put the baked potatoes in a big mixing bowl and layer with ice – straight out of the oven. Then put in the fridge … this way they cool down fast and I’m not heating up the refrigerator with a huge bowl of baked potatoes.
Here are the mashed potatoes that I froze in portions and then put in freezer bags. If you buy too much of something, you can break it down into smaller portions and freeze it. Just be sure to research a little to see if you should cook an item first, parboil it, or if it can be frozen raw.

I had some pepper that I froze raw in a single layer (again, so they won’t stick together) … and then packed in vacuum seal bags. They will be fresh and ready when I want to cook some onions an peppers in the near future!
I thought about doing this with onions … but from some of the things that I have read, the onion can make your whole freezer smell if you lay them out on a tray uncovered to freeze them. So, not sure about this.
Anyway, it’s one of the kitchen appliances that I highly recommend if you like to buy in bulk and stock your freezer.
