My “go to” dessert recipe for Thanksgiving.
I hope everyone has a safe and happy Thanksgiving. I am thankful for my health, my family, and everyone who helps me save money and contributes their time and effort for helping each other. I want to share a pumpkin cake recipe with you that our family makes every year. I am not really fond of “cake” but this is a little different. The only other cake that I really like is the pistachio poke cake that my grandma makes. I need to get that recipe. I have never made it myself.
This pumpkin cake recipe has been in my family for many years. I am guessing that it probably came from the back of a box cake or a magazine. All I know is that we make this every year in our family. I do not know the origin of the recipe, but if someone does, I would be glad to give credit to the original recipe owner.
If I am in a hurry, I just crumble the topping on. If I am feeling a little creative, I do silly stuff like use cookie cutters or cut out simple shapes. I have written out the recipe with Clover Valley (CV) ingredients so that you can get the best deal at Dollar General, since I’m guessing most of our readers shop there.
Ingredients:
- Betty Crocker yellow cake mix on sale for $1 at DG
- 4 eggs (I do not know the price at DG)
- 1 ½ sticks butter (I do not know the price at DG)
- ¾ cup CV white sugar $1 w/ digital coupon
- ½ CV brown sugar $1 w/ digital coupon
- 1 ½ tsp CV ground cinnamon $12/3 cup CV evaporated milk $1
- 29 oz can of pumpkin
Lightly grease 9 x 11 pan.
Bottom crust:
- Yellow cake mix (take a cup out set aside for the topping mix)
- Add 1 stick melted butter and an egg
Mix and press into bottom of pan
Filling:
- Large can of pumpkin
- 1 ½ tsp cinnamon
- ½ white sugar
- ½ brown sugar
- 3 eggs
- 2/3 cup evaporated milk
Mix and pour over bottom crust
Top:
- The one cup of cake mix previously taken out
- ¼ c white sugar
- ½ stick melted butter
Crumble over top … or make designs if you want.
350 for 50 minutes
This cake is best chilled and topped with Cool Whip.
Cover with foil after it has cooled and place in the refrigerator.
