Gumbo recipe with my Walmart seafood clearance finds!

Walmart is clearancing some of it’s seafood in our local store.  Remember that your clearance may be different, but it might be worth it to check.  Anyway, I got 10 oz shrimp cocktail rings for $2 each and 1 lb lobster claws for $10!  I decided to make gumbo with it.

You can check your local store, but scan with the Walmart App to be sure as the price on the shelf might not be right.

So, here is my first attempt at gumbo.  I used a Justin Wilson recipe as a start point, but made some changes as well as additions.

Ingredients:

1/2 cup olive oil

1/2 cup flour

1 medium onion chopped

1/2 green pepper chopped

4  ribs of celery chopped

2 32-oz chicken broth

1 bottle of white bourdeaux

12 oz andeille sausage sliced in rounds

approx 2 lbs of boneless skinless chicken thighs cut in chunks

1 lb lobster claws

20 oz shrimp with tails

2 12-oz bags of fresh okra pods sliced

Penzey’s Cajun seasoning (didn’t really measure this, just shook some in to taste).

Salt to taste

Gumbo File (added to individual servings)

Recipe:

Make a roux with the olive oil and flour over medium heat … keep stirring with a whisk so it doesn’t burn.

When it gets dark like  papersack brown – add the onion, celery, and green pepper.  Cook on low until onions are translucent.

Add the sausage and cook for another couple minutes before adding the broth.  Pour the broth in and stir well.

Add the chicken and pour in the entire bottle of wine.  I poured it into a cup first, not straight from the bottle because I have seen some crazy videos about bottles blowing up.  Mix well and simmer for about an hour.

Add cajun seasoning to taste and then add the okra.  Simmer till okra is done – maybe 30 minutes?

Add shrimp and lobster claws (mine were already cooked) and heat through thoroughly.

Turn off the stove.

Put in bowls to serve and  use the gumbo file as wanted per individual.  Just sprinkle it on top.

I was pretty happy with the results.  It was so good!
